Refosco dal Peduncolo rosso
his wine is obtained from the Refosco dal peduncolo rosso grapes, whose junction of the grapes shortly before the harvest changes color passing from a light brown to an intense red.
The harvest is manual in crates, rather late in order to obtain the maximum degree of ripeness of the grapes. Fermentation takes place in vats of different sizes for about 7/8 days, with frequent daily punching down. The subsequent refinement lasts for at least 18 months in French oak tonneau, with the following six months in the bottle.
The tonality of the wine is strong and decisive, as are the flavors of blackberry, undergrowth, with vanilla and spicy notes. A full-bodied taste distinguishes it from the first taste, which is followed by an acidic note that helps to balance the flavors and to give a unique balance to the wine, very enveloping and warm.
It goes perfectly with typical Friulian cold cuts, aged cheeses, as well as red meats, braised meats and game. To be served at a temperature of 18 degrees.
